Spicy Chicken Fried Rice Recipe
Ingredients:
- 2 cups cooked rice (preferably cold)
- 2 tablespoons vegetable oil
- 1 cup cooked chicken, diced
- 1 cup frozen peas and carrots
- 2 eggs, beaten
- 3-4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2-3 tablespoons soy sauce
- 1 tablespoon sriracha or chili paste (adjust to taste)
- 2 tablespoons chopped green onions
- Salt and pepper to taste
Instructions:
1. Heat vegetable oil in a large skillet or wok over medium-high heat.
2. Add the garlic and ginger, cooking for about 1 minute until fragrant.
3. Add the chicken and cook until heated through.
4. Push the chicken to one side and pour the beaten eggs into the empty side. Scramble until cooked, then mix with the chicken.
5. Add the frozen peas and carrots, cooking until they are tender.
6. Stir in the cooked rice, breaking up any clumps.
7. Add the soy sauce and sriracha or chili paste. Stir to combine and heat through.
8. Season with salt and pepper to taste, and sprinkle with chopped green onions before serving.
Tips:
- For the best texture, use cold, day-old rice. Fresh rice tends to be too sticky.
- Feel free to customize the vegetables based on what you have on hand.
