Acai Berry Protein Bar Recipe
Ingredients:
- 2 cups rolled oats
- 1/2 cup protein powder (vanilla flavor)
- 1/2 cup almond or cashew butter
- 1/4 cup honey or maple syrup
- 1/4 cup acai powder or freeze-dried acai berries
- 1/4 cup chopped walnuts or pecans
- 1/4 cup dried blueberries (optional)
Instructions:
1. Preheat oven to 350°F (175°C) and line an 8x8-inch dish with parchment paper.
2. In a bowl, mix oats, protein powder, and acai powder.
3. Heat the almond or cashew butter and honey in a saucepan until melted.
4. Combine the wet mixture with the dry ingredients. Fold in the chopped walnuts and dried blueberries if using.
5. Press the mixture into the prepared dish.
6. Bake for 15-20 minutes. Let cool completely before slicing into bars.
