  3. Add any optional flavor boosters, then pack the cabbage tightly into a clean glass jar or crock. Press it down firmly so the brine rises above the cabbage.

  5. Cover the jar with a cloth or loose lid to keep dust out but allow gases to escape.

Fermentation Time
Let it sit at room temperature (out of direct sunlight) for about 1–2 weeks. Start tasting around Day 5. When it hits your sweet-tangy-crunchy spot, it’s ready to refrigerate.

  • Mold? Toss anything above the brine, but the kraut underneath is usually just fine.
  • Brine too low? Mix 1 tsp salt into 1 cup water and add it to cover the cabbage.
