Ingredients:
- 2 cups cooked rice (preferably cold)
- 2 tablespoons vegetable oil
- 1 cup cooked chicken, diced
- 1 cup diced pineapple (fresh or canned, drained)
- 1 cup bell peppers, diced
- 2 eggs, beaten
- 2-3 tablespoons soy sauce
- 1 tablespoon hoisin sauce (optional)
- 2 tablespoons chopped fresh cilantro (optional)
- Salt and pepper to taste
Instructions:
1. Heat vegetable oil in a large skillet or wok over medium-high heat.
2. Add the chicken and cook until heated through.
3. Push the chicken to one side and add the beaten eggs to the empty side. Scramble until cooked, then mix with the chicken.
4. Add the bell peppers and pineapple, and cook until the peppers are tender.
5. Stir in the cooked rice, mixing well.
