- 8-10 cups of water

Instructions:

1. Rinse the chicken parts under cold water and place them in a large stockpot.

2. Add the onion, carrots, celery, garlic, bay leaves, black peppercorns, and salt (if using).

3. Pour in enough water to cover the chicken and vegetables, about 8-10 cups.

4. Bring the mixture to a boil over high heat. Once it reaches a boil, reduce the heat to low and let it simmer.

5. Skim off any foam or impurities that rise to the surface during the first 30 minutes of simmering.

6. Let the broth simmer gently for at least 2-3 hours. For a richer flavor, you can simmer it for up to 6 hours.

7. If you are using fresh herbs, add them during the last 30 minutes of cooking.

8. Once the broth is done, remove it from the heat and let it cool slightly.

9. Strain the broth through a fine-mesh sieve or cheesecloth into a large bowl or another pot to remove the solids.

10. Discard the solids or save the chicken meat for another use.

11. Let the broth cool completely, then refrigerate it overnight. This will allow the fat to rise to the top and solidify.

12. The next day, skim off the solidified fat from the top of the broth.

13. Your homemade chicken broth is now ready to use! Store it in airtight containers in the refrigerator for up to 5 days, or freeze it for up to 3 months.
