1. Creamy Spinach and Broccoli Soup Recipe 🥦


   Ingredients:

   - 1 tablespoon olive oil

   - 1 onion, chopped

   - 2 garlic cloves, minced

   - 4 cups broccoli florets

   - 2 cups fresh spinach leaves

   - 4 cups vegetable broth

   - 1 cup unsweetened almond milk (or any milk of choice)

   - 1 teaspoon dried thyme

   - Salt and pepper to taste

   - 1/4 cup grated Parmesan cheese (optional)

   - Fresh lemon juice for serving


   Directions:

   1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.

   2. Add broccoli florets and vegetable broth, bring to a boil.

   3. Reduce heat and simmer for 10-15 minutes, until broccoli is tender.

   4. Stir in spinach leaves and cook for 2-3 minutes until wilted.

   5. Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend until smooth.

   6. Return the soup to the pot, stir in almond milk and thyme. Heat through.

   7. Season with salt and pepper to taste.

   8. Serve with a squeeze of fresh lemon juice and optional Parmesan cheese.

   Ingredients:

   - 1 tablespoon olive oil

   - 1 onion, chopped

   5. Use an immersion blender to blend the soup slightly, leaving some texture. Alternatively, carefully transfer half the soup to a blender and blend until smooth, then return to the pot.

   6. Season with basil, salt, and pepper to taste.

   7. Garnish with fresh parsley before serving.
