Classic Chicken Fried Rice Recipe
Ingredients:
- 2 cups cooked rice (preferably cold)
- 2 tablespoons vegetable oil
- 1 cup cooked chicken, diced
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs, beaten
- 3 green onions, chopped
- 2-3 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions:
1. Heat vegetable oil in a large skillet or wok over medium-high heat.
2. Add the chicken and cook until heated through.
3. Push the chicken to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until cooked, then mix with the chicken.
4. Add the mixed vegetables and cook until tender.
5. Add the cooked rice, breaking up any clumps. Stir to combine everything well.
6. Pour in the soy sauce and sesame oil. Stir until everything is evenly coated and heated through.
7. Season with salt and pepper to taste and sprinkle with chopped green onions before serving.
Tips:
- For the best texture, use cold, day-old rice. Fresh rice tends to be too sticky.
