Almond Coconut Protein Bars
Ingredients:
- 2 cups rolled oats
- 1/2 cup protein powder (vanilla or unflavored)
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/4 cup shredded coconut
- 1/4 cup chopped almonds
- 1/4 cup dried cranberries (optional)
Instructions:
1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
2. In a large bowl, mix the oats, protein powder, shredded coconut, and chopped almonds.
3. In a small saucepan, heat the almond butter and honey until melted. Stir well.
4. Pour the wet mixture over the dry ingredients and mix until fully combined. Fold in cranberries if using.
5. Press the mixture into the prepared dish.
6. Bake for 15-20 minutes until golden brown. Let cool before cutting into bars.
