Goji Berry Almond Protein Bar Recipe
Ingredients:
- 2 cups rolled oats
- 1/2 cup protein powder (vanilla or unflavored)
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/2 cup dried goji berries
- 1/4 cup chopped almonds
- 1/4 cup chia seeds
Instructions:
1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
2. In a large bowl, mix the oats, protein powder, chia seeds, and chopped almonds.
3. In a small saucepan, heat the almond butter and honey until melted and smooth.
4. Pour the wet mixture over the dry ingredients and mix well. Stir in the dried goji berries.
5. Press the mixture firmly into the prepared dish.
6. Bake for 15-20 minutes or until golden brown. Allow to cool before cutting into bars.
